Spring Berry and Grapefruit salad

Ingredients

  • 4 cups Organic spring mix
  • 1/2 Cucumber sliced
  • 1 Carrot sliced
  • 1/4 cup Red onion sliced thinly
  • 1 Grapefruit peeled and sectioned
  • 2 cups Organic grape tomatoes
  • 1/4 cup Nuts and/or seeds of your choice
  • 1/2 cup Olives

Salad Dressing

  • 1/4 cup Grapefruit kombucha or other flavour of your choice
  • 1/8 cup Apple cider vinegar
  • 1/4 cup Milk thistle oil
  • 1 Tbsp Organic herbal mix
  • Celtic salt or himalayan salt and pepper to taste

Instructions

  1. Toss all ingredients together. Keep dressing in a separate dish for drizzling individually. Serve!

Loaded Energy Slices

Prep Time 30 minutes
Servings 8

Ingredients

  • 1 cup large flaked oats
  • 1/2 cup dates
  • Juice of half an organic lemon
  • rind of half an organic lemon
  • 1/2 cup Dried coconut slices
  • 2 Tbsp Chia seeds
  • 1 Tbsp Sprouted flax powder
  • 1/4 cup Hemp hearts
  • 1/4 cup Almonds
  • 1/4 cup Walnuts
  • 1/4 cup Sunflower seeds
  • 1/4 cup Golden berry
  • 1/4 cup Pumpkin seed kernals
  • 1 Tbsp Coconut oil
  • 1/2 cup Kamut puffs

Instructions

  1. Directions:

    Combine first twelve ingredients in a food processor or high speed blender. Transfer to a bowl and add final 3 ingredients. Press into a loaf pan and refrigerate for a few hours. Cut into whatever size slices you want. Enjoy whenever you need a bit of an energy boost.
